It is quite surprising to know that soaking such veggies will make them alive again. The temperature should be 50℃ and soak the veggies for one minute. Some may think that is impossible. We have been washing veggies in ice cold water in winter time. Shimizu says "It was verejeuvinilery challenging for the first time", but once she did it, it was so easy and the veggies have rejuvenated with great color and crunchiness. She is now able to adjust the temperature using her finger. It is about 50℃ when she feels "This is way too hot for a bath".
So why does it need to be 50℃? Not any hot water do the job?
According to Shimizu, this temperature does not damage the nutrition of vegetables and only destroy the germs. When she soaks vegetables, she even has the feelings of achievement that she has destroyed the germs. She told this new technique to her staff, however, everybody around her knew about it, even a male staff. In his house, all vegetables are first soaked into hot water before going into the fridge. When shimizu said "Wow, your wife is a hard worker!", he replied that in fact, it's all his job.
It is hard to maintain freshness of vegetables. We often see dead veggies in our fridge. In summer, we often crave fresh salad. It is a great way of refreshing vegetables, and we all must try it.
